Start by rinsing the squash in cold water to remove any surface dirt. Next, slice the squash in half lengthwise. Take a spoon and scrape out the seeds. (You can rinse the seeds and dry them and then plant them.) To cut the squash into smaller pieces, place the squash cut side down on the cutting board and cut into equal pieces about as thick as your pinky finger. We call these “delicata smiles.” Put all the cut squash in a bowl and toss with a tablespoon of olive oil and some salt and pepper. Spread on a baking sheet (can be lined with parchment paper) and roast in a preheated 375º oven for approximately 25 minutes or until the squash is soft and starting to brown.
