pasta with sausage and greens

A basic method of making pasta with sausage and greens...

Heat a large sauté pan. Add some olive oil. Add the sausage (removed from the casing and crumble as you add it to the pan) and cook, breaking up with a wooden spoon or whisk, until browned.

Add your greens (cavolo, spigarello, broccoli rabe, broccolini) to the pan, season with salt and pepper and chili flakes and toss to coat the greens in the sausage grease. Sauté briefly or just until the greens are tender. Deglaze the pan with a cup of reserved pasta water, making sure you scrape up all the pan bits. Add the cooked pasta and toss to coat. (It’s ok if it seems a little bit soupy because you’re about to add the cheese…) Add grated parmesan and/or pecorino cheese and a little more olive oil if needed. Toss to coat until creamy.
